Pumpkin Spice Peanut Butter Cookies
Ingredients:
175g Caster Sugar
1 Egg
Method:
Preheat the oven to 180 degrees and line two large baking sheets with baking parchment.
Place the peanut butter and sugar in a bowl and mix well with a wooden spoon, add the egg and mix well until the mixture forms a dough.
Break off cherry tomato-sized chunks of the dough and place, well-spaced apart, on the lined baking trays.
Press the cookies down with the back of a fork to squash them a little.
Place the trays of cookies in the preheated oven and bake for 12 minutes until golden brown in colour, then transfer onto a wire rack to cool.
